How many coaches is enough?

The more, the merrier, as I prefer. However, I look as these "coaches" as helpers, as I limit "final decisions" to myself and 1 or 2 main assistants. You point out a main advantage, in that the players are kept busy. You must have "helpers" that know what you teach and how you teach it. I have found that a pre-season skull session with those who wish to help gets everything off to a good start. This helps ensure that everyone is on the same page. Most parents will love to help, but some have the need to be asked, for fear of "butting in." Another advantage of utilizing as many helpers as possible, is that you may be well training the coaches of the next few years. Not only will the kids imitate the way the head coach conducts himself, but be aware that you may well be setting an example for future coaches. Finally, as you utilize the extra help, encourage their ideas and input, as they may see something that excapes you; and explain WHY, you, as the head coach, prefer one way of doing things over another. There are many ways of doing something right, and just because someone else does it different, does not mean that it is wrong.
